Three ingredient cookies

It’s been a while since I posted a recipe… and it’s not for lack of cooking, baking and eating! I’ve been incredibly busy with work for several months and have been transitioning from a 27-year vegetarian diet, to a near vegan one.

Last night I made these cookies and then ate two as part of breakfast this morning. Cookies for breakfast? With these ones, you needn’t feel guilty.

I won’t even bother listing the ingredients – you’ll need bananas, old-fashioned oats (the really coarse ones) and 1/4 cup of vegan or regular dark chocolate chips.

To make them, preheat your oven to 350 degrees and line a large baking tray with parchment paper. Mash 3 large bananas in a bowl, mix in 2 cups of coarse oats and 1/4 cup dark chocolate chips.

Form into balls and then gently flatten each one before baking for 15 minutes. Store them in an airtight container in the fridge and enjoy as part of breakfast, a quick snack, or a healthy treat.
